I thawed some turkey breast cutlets. I think I'll bake them in a lemon rosemary concoction with pumpkin seeds, pine nuts and sundried tomatoes. And maybe the carrot ginger soup too?

No recipe. I did a rosemary/onion powder/garlic salt/lemon pepper/poultry seasoning rub, with the pine nuts, pumpkin seeds & sundried tomatoes. Baked at 325 degrees for 20 minutes. I threw in a little lemon juice and cooking wine and then covered the cutlets to try and keep them drom drying out. The carrot ginger soup was an organic brand I got at Trader Joe's and I added a cheddar (gruyere) melange cheese to it. Turned out pretty well.

I'm tired of cooking chicken and I want something besides pasta/rice as a side dish to my meals during the week. I really enjoy couscous but you can only do so many things with it. Anybody have any thoughts? I'm thinking like a pork tenderloin with some potatoes or maybe steak and salad.

I highly suggest a london broil, and I have at least one bitchin recipe for that cut of meat other than marinade and grill. I'll get it together and send it over to you sometime tomorrow. Also can't go wrong with pork tenderloin cutlets, either breaded and pan-fried, sautéed in sauce, or grilled.

My go-to semi cheap meal is marinating a bunch of pork steaks then cooking them and steaming some veggies as a side. I just bought a huge rice cooker that strand veggies and it's awesome. A quick meal I make weekly is quesadillas. I also got a dilla maker and you can pretty much make anything into a quesadilla I've learned.
