Found this recipe and paired it with some cilantro-lime black beans and rice.

It's amazing what you can do when you have free rein of the kitchen.

Some combination of pasta, cabbage, salmon, and an egg/potato breakfast scramble will be my next two meals.

Sauteed some chopped scallions in butter, then topped it with scrambled egg, cheese and ham. Put it on some buttered toast. It came out fantastic

The other night I made something that turned out really well.
First I boiled some veggie infused pasta in some vegetable broth. While that was happening, I took some ground turkey and browned it with some onion powder, seasoned salt, pepper and Italian season. Then I took some veggies: sundried tomatoes, mushrooms and peppers I chopped up and sauteed them in some white cooking wine and a little onion powder and seasoned salt. Once all that happened, I went back to the meat and poured in some low sodium tomato soup, just enough to kind of submerge the meat. I also added in a vegetable bouillon cube. I let everything simmer for a few minutes on low heat. Then I drained the pasta and add it and the veggies in with the meat and tomato soup/sauce. I let that simmer for a few minutes. When it was ready to eat, I topped off my serving with some shaved parmesan.
Turned out soooo good! And I even froze some and took the rest to work this week and it tasted even better.
