I made these for lunch today!
My sister is often hard to eat with because she is a vegetarian and also allergic to soy. But I found a recipe that was really fun to make and we both enjoyed.
You can check out the recipe if you want, here. I ditched the shrimp since I'm allergic to seafood, and I left out the mint, just not a fan. I also added slices of cucumbers in and shredded carrots. Instead of vermicelli I used rice noodles. The two sauces are Sweet Chili, it kind of tastes like a spicy sweet & sour sauce, and a Thai Peanut sauce.
My only issue was my rolls were a little too loose, but for my first time I think I did good.

Resurrecting this thread cuz I actually get to cook again.
This was dinner tonight. I always make it with chicken tenderloins, rather than bone-in chicken pieces. And homemade french fries.

I normally wouldn't post in here because every night, I normally eat pizza or subway. But tonight, I'm making a chicken salad and a nice burger with extra onions, bacon bits, pickles, lettuce, cheddar and colby jack cheese, and tomatoes. I guess I'll put my culinary skills to the test.
