Hey, so I've been thinking and forgetting about this for quite a while, and it seems there's no such thread yet.

WE ALL LOVE FOOD. How about we share some brilliant recipes that our grandmas have left for us in XIX century notebooks?

So. The thread is generally where you post recipes of dishes you think other LSIers might enjoy. Perhaps something typical of your country. You choose. Or ask others.

Bone-In Chicken Thighs with Rice

Chicken Thighs:

6 bone in chicken thighs

Remove the skin on the chicken thighs and season each side with salt, pepper, garlic powder, paprika. You can add Cayenne Pepper to give it a kick.

Preheat over to 425 and cook 15 minutes each side, then another 10 per side.

Rice

You need:
1 medium onion, chopped
3 cloves garlic, chopped
3 bay leafs
1 bullion cube
4 Tbsp Olive oil
Ketchup/Can of crushed tomatoes
Salt/Pepper to taste

Place onion, garlic, bay leaf, and olive oil in a pot and saute till golden brown.
Add can of crushed tomatoes, or squirt abut 1 cup of ketchup into the mix.
Add 5 cups of water and the bullion cube. Season liquid with salt and pepper to taste

Bring to a boil and then reduce heat to simmer, stir frequently so it does stick or burn.

Remove from heat when most of the liquid is gone and let rest for 10 minutes.

Serve alongside chicken thighs.

gluten free, vegan pie crust

My wife and daughters are Celiacs....so everything is gluten free in our house...my youngest daughter also has a dairy allergy right now.....so we have to get creative...

Easy reciepe
2 cups rice flour
1/3 cup shortening or vegan butter......if butter, add it in cold
a tablespoon of sugar
3-5 tablespoons of cold water.
mix the flour and sugar
cut in the shortening or butter until it looks like small pellets.
add water a bit at a time. knead until it's mixed well. add more water if dry and crumbly
press out into a pie pan and freeze at least 8 hours befor using to bake pie

Curry Base:

2 large onions, roughly chopped
1 head of garlic, roughly chopped
2 large cans of diced tomatoes
2 small cans of coconut milk
1 35oz plain greek yogurt
Garam Masala
Curry Powder
Chili Powder
Salt
Pepper
5 tablespoons Olive oil

1. Sautee garlic and onions in olive oil, 8-10 minutes
2. Add both cans of tomatoes, let simmer for 10 minutes
3. Add both cans of coconut milk, Garam Masala, Curry Powder and Chili Powder. Mix until well blended
4. Add yogurt, stir until it melts.
5. Shut off heat and use a hand blender to puree until sauce is smooth.
6. Serve

If cooking with chicken or other meats, add meat at the 5 minute mark in step 1. If cooking with fish, add fish after step 5 and let sit for 10 minutes. The residual heat will cook the fish.

Ramen Noodles:

2.5 cups of water for every package of noodles you intend to make (Adjust the recipe as needed for the number of packages)
1 Package of Ramen seasoning
1/2 Ginger Root - peeled and chopped
2 Scallions- chopped finely
1/2 Bullion cube

In an appropriately sized pot, add water, ginger root, bullion, scallions and seasoning.

If you have dry meats/poultry leftover from a previous meal/weekend cooking, you can add them also.

Bring to a boil and let simmer for 3 minutes.

Add ramen noodles and allow to soften - usually 5 minutes max

Poor into a bowl and enjoy.

You can optionally add a soft boiled egg cut in half.

Agreed.....but no time to properly type the instructions for a recipe to share... best I can do is share others that are already typed for example like:

Pizza!! 3 of them!

Ok, I posted this in Randomness and decided to preserve these Cajun Louisiana dishes here so others can find these recipes (note listing on left side with 71 different poultry recipes!)

Pie......
Chess Pie.
Start with 4 eggs. Beat lightly .
Add cup and a half of sugar, mix with the eggs.
1 1/2 teaspoons of vanilla. mix in
1 stick of melted butter, mix in
1 tablespoon of corn meal, mix in
1/3 cup...or a bit more, depending on your taste, of evaporated milk....mix it in.
a tiny dash of salt.
Mix it all up, pour into pie shell, bake for 50 min at 350.

Since a famous country trio changed their name to Lady A... I wish they put 'rancio' after the A. Do you have the recipe for the Lady Arancio/Arancia cocktail?
I only know the one for Blue Lightning (curaçao, Southern Comfort and Bourbon).
